Bacon and Goat Cheese Asparagus Frittata

A quick and easy baked egg casserole, or crustless quiche, with bacon, goat cheese, and asparagus!

  • 4 strips bacon, cut into 1/2 inch pieces
  • 8 large eggs
  • 1 cup cottage cheese
  • 4 ounces goat cheese (chevre), crumbled
  • 8 ounces asparagus, trimmed and cut into bite sized pieces
  • 2 green onions, sliced
  • salt and pepper to taste
  1. Cook the bacon and set aside to cool.
  2. Mix the eggs, bacon, cottage cheese, goat cheese, green onions, salt and pepper and pour into a 8-10 inch oven safe pan.
  3. Bake in a preheated 375F/190C oven, about 25-30 minutes.

Option: Replace goat cheese with crumbled feta, shredded/diced cheddar, shredded/diced gruyere, shredded/diced havarti, etc.
